So, it's Valentine's Day....the "day of LOVE" ! What could be better to share with your sweetie than some delicious and decadent chocolate truffles? Pure chocolate goodness rolled into little balls and dipped in more chocolate! And these are so easy to make! You only need three ingredients! THREE! (Well, four , if you count the second kind of chocolate.) You just need a little bit of time to let the chocolate set up.....then they're ready to wrap up for a nice little gift for the kids or a friend or, like I mentioned, to share with your "special someone".
Chocolate Raspberry Truffles (makes 32)
12 ounces semi-sweet chocolate chips
6 tblsp. butter
1/2 cup plus 1 tblsp. raspberry preserves or jam
Coating:
8 ounces milk chocolate chips
6 ounces semi-sweet chocolate chips
Heat the chocolate chips with the butter in a pan over simmering water until melted and smooth. Alternately, you could melt in the microwave...just watch carefully and check often.
Add the raspberry preserves and stir until smooth. Place bowl in refrigerator to firm up.
Using a small scoop, portion out onto waxed paper-lined sheet. Then smooth out into balls by rolling between your hands. Place back into the refrigerator to set up.
Meanwhile, melt the milk chocolate and semi-sweet chocolate chips in a bowl over simmering water.
Keep the bowl of melted chocolate over the warm water and, using a spoon, dip the truffles in the melted chocolate and place back on the waxed paper. Decorate tops, if desired, and chill until coating is set. That's all there is to it!
Now....go ahead and indulge....it's Valentine's Day!!
